This is my staple food when I’m out on a long ride. I like oats as they are a slow release energy source, and I like flapjacks because they just taste darn good. My wife will tell you that you should use some syrup but she knows nothing. Honey is the way to go!
This is my recipe that I use. You have to make sure you don’t dry them out too much or they become impossible to eat on the bike when you’re cycling hard and a little bit dehydrated, but cooked long enough that they don’t fall apart as you cycle. It’s a bit of experimentation with your oven until you get it right. They are really easy to make.
- 500g porridge oats
- 250g block of organic unsalted butter
- 1 jar of organic honey
- 3 dessert spoonfuls of demerara sugar.
Put the oven on at 160-170C.
Melt the butter in a large pan over a low heat. Once it’s melted, add the entire jar of honey and mix it in. Once it’s mixed, add the sugar and mix some more. Then add the oats and keep mixing until all the oats are evenly coated.
Grease a baking tray with a little bit of vegetable oil, and then add the mixture to the tray and spread it around evenly. Make sure you leave a little bit of the mixture in the pan for the kids to scrape clean, they will love you for it. Try not to eat too much at this point, because it does taste great. Flatten down the mixture using a fish slice or something similar to get a nice even thickness. Once the oven’s warmed up, put them in the middle for 20 minutes. They should just be starting to go a little brown by the time they’re ready. If you wait until they are visibly brown all over you’ve overdone it.
Take them out and leave to cool. Don’t try to cut them yet as the mixture will still be quite soft. Once they’re nearly cool, the mixture hardens up. Cut them into 24 squares. Leave to completely cool and then use a fish slice to take them out the tray and store in an airtight container.
Eat one every 30-40 minutes on a hard ride to keep the energy up. A nice source of carbohydrate that tastes fab!
